Considering how rare and expensive lower level mats are getting you'll be lucky to clear Outlands with that seed money.
Best to take one tradeskill and one gathering profession and simply write off a weekend leveling them by gathering.
I'm going to recommend mining/JC as flying now makes mining a piece of cake, plus, there's zero competition for the lower level ores, meaning that you can fly around and pretty much have every ore node in the zone to yourself, meaning very fast gathering of mats resulting in very fast leveling of the gathering and trade skill.
On the other hand, skinning means going out and wasting time slaughtering thousands of grey mobs and even though you can one shot them you've still got to waste time looting them, then skinning them and eventually either selling or destroying whatever you've looted.
The plus point is that if you're willing to take the time you can make a mint selling the inevitable blues and greens you'll find or, if you're interested in chanting, effectively level the chanter for free between the drops from the critters and the leather items you'll make leveling LW.
All said though, class will ultimately decide which to choose - mining gives a health bonus while skinning gives a crit bonus - which do you need?
JC gives you three super gems while LW gives awesome wrist/leg chants on the cheap - again, which gives more benefit?
For gear, JC will give you all of your gems, rings, neck and trinkets while LW gives you everthing else - once more the question is which is of more value to you?
